A Few of our Favorite Easy Snacks

Avacado Dip

My sister gave me this recipe and it's a go to a LOT! 1 avacodo

1 jalapeno pepper de-seeded

2 table spoons of mayonaise

1 box of cream cheese

I put it all the ingredients into my mini Cuisinart and blend until smooth.

I serve this with veggies like celery and carrot sticks, or tortilla chips This is perfect for those mid afternnon snacks, and the little bit of bite in there from the jalapeno is great!

Cucumber Dip or Spread

1 box of cream cheese

1 cucumber peeled and de-seeded (if its a large, I use only half of it and save the other half for dipping or another quick snack).

white pepper as needed

Blend until smooth in the mini Cuisinart I use this with the cucumber slices, carrots & chips.

I start with half and then play with the consistency. I usually end up using about 3/4 of the box of cream cheese....You can always add more cream cheese.

I slice the cucumber half lengthwise and use a spoon to de-seed the one cucumber

A few ideas for the leftover half of cucumber:

1. Slice and place in a drink container for a refreshing drink.

2. Slice it into a bunch of rounds, and I splash rice wine vinegar on it and sprinkle a little pepper for a savory refreshing snack.

My grandmother used to make that for my sister and me after swimming! We loved it!

3. BONUS Lunch Idea:

With this dip, I make sandwiches with this on any bread, but my youngest loves it on toasted Texas toast or Hawaiian mini rolls.

Mini Calzones

This is probably a snack/lunch many have made, but it really comes in handy for ranch working days...quick grab and Go!

1-2 cans of crescent rolls

mozzarella cheese sticks

I unroll and section out each crescent piece and put 3 pepperonis and 1 half of a mozzarella stick roll it up and close the sides.

{I have also unrolled the whole thing in one sheet and split in 2, and made 2 large calzones as a lunch for 2 hungry teenage boys}

Then, bake according to the directions on the can.

I just check a few minutes before the timer, because sometimes it needs to brown a little more or less...I can never time it exactly....eye roll, LOL!
